Githeri is a traditional Kenyan dish made from maize and beans. Typically, the maize and beans are boiled together and then later fried to infuse flavor. For this githeri recipe, I infused the orange flavor of coriander into the dish. This highlights and brings out the aroma and enhances the taste.
