Papprika Stir Fried Noodles In Sweet Soy Sauce

Stir fried noodles

I recently got into a conversation about the different types of pasta. Suffice it to say that the discussion escalated quickly. Just like that, we were talking about stir fried noodles! Is pasta the same as noodles?

Words bandied about included penne, spaghetti, fettuccine, tagliatelle, durum wheat, semolina, laaawd!!

My take, pasta (Mediterranean); noodles (Asian). Same idea, varied ingredients. You can have noodles made from rice and mung bean (ndengu) flour! I’m sure that the Italians would have none of that 😅

There is also the subtle variances such as use of unleavened dough in the preparation of noodles; and the use of the ‘heavier’ durum wheat in making of pasta dough. The jury seems to be out on spaghetti though, but this can be revisited😎

Stir fried noodles

Let’s move on to the preparation of these stir fry noodles. They are delish and simple to whip up.


Ingredients

500g Noodles

1 red onion

2 cloves crushed garlic

1 tsp crushed ginger

2 tomatoes

1 small green bell pepper

½ cup chopped coriander

2 tbsps dark soy sauce

½ tsp ground papprika

A pinch of black pepper

Salt to taste


Stir fried noodles.
Instructions

Cook the noodles to al dente, making sure to follow the instructions on the packet. Once ready drain out the water and allow to stand for a few minutes.

Actually, by the time the noodles are done you should be finishing up with the next step below😊

In a skillet, pour in 3-4 tablespoons of vegetable oil over medium heat. When heated, add chopped onions and saute.

Wait until soft and translucent before adding the crushed ginger and garlic. Sprinkle some chopped coriander stalks, papprika, salt and black peppercook for about one minute. Take the chopped tomatoes and add them in with finely diced green bell pepper. Stir and pour in the dark soy sauce.

Allow to cook for another minute on low heat till the tomatoes wilt. Chop up the remaining coriander and add most of it into the skillet, leaving just enough for garnish.

Take the drained out noodles and pour them into the skillet. Toss the noodles gently and they are done! Sprinkle the remainer of the coriander as garnish and you are ready to serve! Delicious, spiced up stir fry noodles😋.
