I did not see this spicy nduma recipe coming. It is mid morning and i am feeling peckish. And yes, i did have a standard continental style like breakfast. I saunter into the kitchen and take a peek into the fridge. The already boiled nduma was perched right there, on one of the racks. The idea of plain old nduma didn’t excite me so i decided to give it a very quick fry…something savory. Yup! That would definitely be better!
Sheepishly, i must admit that lately i cannot reign in my appetite! It is like a wild mustang on the prairie! Every two hours or so, my mid section beckons (and secretly, I LOVE IT!!). I promptly round up these:
- Nduma (Arrowroot/Taro root)
- 1 Onion
- 2 Tomatoes
- 1 clove garlic
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon ground coriander
- Cayenne pepper (to taste)
- 1 tablespoon tomato paste
- 3 tablespoons vegetable oil
Pour vegetable oil in a skillet and heat. Add cumin seeds and fry for 30 seconds.
Add onion and crushed garlic and cook for 1 minute. Do not let the garlic brown.
Next, add the tomatoes, pepper and coriander and continue to cook on low heat.
Now use tomato paste and drizzle some vegetable stock or water.
Finally, add the nduma (arrowroot) and cook for 3-5 minutes, stirring continuously.
Serve hot! I enjoyed mine with a cup of herb tea and a slice of brown bread to soak up the sauce 🙂 what about you? Another awesome nduma recipe from my website that you should try for breakfast can be found here.
