Red Velvet Crepes in Chocolate Syrup

Last weekend I was super excited because my dad came to visit! He stayed for a couple of days and this gave me the opportunity to cook for him on several occasions. Now that I think about it, I do not remember the last time I cooked for him…I must have been a teenager! So one of the things I made for him are red velvet crepes.

Crepes are a thing in my home. I always have to prepare a large batch because they literally fly off the pan! Everyone who is asleep wakes up and draws a bee line to the kitchen. By the time the bunch is satiated, I’m down to the last 3 or 4 crepes! This is why I sometimes opt for a baked pancake option, which i highly recommend if you want to save time or have breakfast together.

Red velvet crepes


For the Red Velvet Crepes:

3 cups All Purpose flour

1 egg

2 table spoons of sugar

1½ cup of warm water

¾ a cup of milk

1 teaspoon red food colour


For the chocolate syrup:

1 cup of water

2 tablespoons of sugar

1 table spoon of cocoa powder

Vanilla essence



In a bowl, mix the flour and sugar and food colour. In another smaller bowl, beat the egg and mix with the milk and water. Add the egg mixture to the flour and mix thoroughly until smooth.

Heat your frying pan, add very little vegetable oil to reduce sticking and pour a ladle of crepe batter into the pan. Using a table spoon, spread the mixture outward from the center in a circular motion. Once the mixture is spread out thin and evenly, add a little vegetable oil and cook for 30-45 seconds. Flip the crepe over and repeat. Remove the crepe once ready and continue to make more.

For the chocolate syrup, pour the water into a small pan on medium heat. Mix in the sugar, cocoa powder and one teaspoon of vanilla essence. Keep stirring until the sugar is dissolved and the mixture comes to a boil. Once it has boiled, educe the heat and continue stirring. It will begin to reduce and thicken. Switch off the heat at your desired consistency but don’t let it get to thick as it can very quickly solidify.

Serve the red velvet crepes with the chocolate syrup drizzled on them or as a dip. A delectable breakfast to start your day!
