  1. Peel and wash the potatoes. Slice them into thin slices.
  2. Peel the potatoes into a bowl of cold water. This prevents oxidation which causes discolouration. It controls starch levels, giving you crunchy crisps.
  3. Pour vegetable oil in a skillet and add sage. Heat.
  4. Pat down the potatoes on a clean kitchen towel.
  5. Place in hot oil and fry for not more than 5 minutes. Keep a close eye on them as they can brown in an instance.
  6. Remove and drain on serviettes. Enjoy your crunchy snack!
