Sage Beef Stir Fry with Garlic Matoke
Green bananas are just as versatile as potatoes and that is why I opted to include them in the dish. Plus in reality, I wasn’t convinced that the bananas that I had at that time would be enough. So we improvise.
The beef stir fry is bursting with flavor. The aroma and flavor that sings the loudest is one of my favourite herbs, sage.

I was also generous with the garlic in this recipe. Cook it nice and slow on medium then low heat. Preferably, start your cooking with the beef and continue cooking even as you prepare the Matoke.
