Last week ,I had the pleasure of preparing lunch for a friend. I opted to cook a sage beef stir fry with garlic matoke.

Green bananas are just as versatile as potatoes and that is why I  opted to include them in the dish. Plus in reality, I wasn’t convinced that the bananas that I had at that time would be enough. So we improvise.

The beef stir fry is bursting with flavor. The aroma and flavor that sings the loudest is one of my favourite herbs, sage.

I was also generous with the garlic in this recipe. Cook it nice and slow on medium then low heat.  Preferably, start your cooking with the beef and continue cooking even as you prepare the Matoke.

Sage beef stir fry with garlic matoke
Instructions
For the Beef Stir Fry
  1. Dice the beef and sear in a pan. When dry, add sliced onions and cook while stirring for about 1 minute.
  2. Pour in some vegetable oil and cook for another 3 minutes before adding ginger then garlic.
  3. Add in the spices black pepper, turmeric and sage. Season with salt.
  4. Chop the tomatoes and add them into the pan. Cook down on medium heat.
  5. Pour in half a cup of beef stock or water and allow to cook down for 15-20 minutes.
  6. Slice the green bell pepper and add it to the beef. Cook for a further 5 minutes and you are done.
For the Matoke
  1. Peel the bananas and wash in salty water. Peel and wash the potatoes too.
  2. Boil the bananas and potatoes in generously salted water.
  3. Meanwhile, sautèe the onions, add ginger, garlic and tomatoes.
  4. Season with black pepper, salt, thyme and parsley and allow to simmer down on low heat.
  5. When the potatoes and bananas are ready, toss them in the tomato sauce for a few minutes and serve.
Recipe Notes

Serve this delicious meal with sauted green vegetables. For this recipe ideas sauted sukuma wiki (kale) in red onions and seasoned with a pinch of black pepper and salt to taste.
