Peppery Cumin Seed Fried Rice

I made cumin seed fried rice for the first time, I was pleasantly surprised at how this tiny seed can totally transform a rice dish! This rice is aromatic, pretty and absolutely delectable!

The cumin seed is tiny and eclipse shaped, resembling the caraway seed. In order to extract flavor from the cumin seeds, you may dry roast it or fry in hot oil  (thus infusing the oil with the flavor) as I have done in this instance. Take care not to roast or fry for too long, spices burn easily.

Cumin has a nutty, earthy flavor with peppery, spicy notes. It is used in many chillies and curry mixes such as garam masala and curry powder. When mixed with coriander seeds, you get a spice mixture called dhana jeera, which I especially love to use when preparing my legumes.

Instructions
  1. Heat some vegetable oil in a pot.
  2. Pour in the cumin seeds into the oil and leave to cook for 1-2 minutes. This allows the cumin flavour to infuse into the oil and therefore into the dish.
  3. Add in the sliced onions and and sautèe. Do not brown the onions.
  4. Wash the rice and pour it into the pot. Stir in for about 30 seconds to ensure that the rice is well coated with the oil.
  5. Pour in the hot water. Season with salt and stir.
  6. Cover the pot and allow to cook for 15-20 minutes. Remove the lid, lower the heat and cook for a further 5 minutes before switching off the stove.
  7. Serve with your favourite main dish.
Recipe Notes

An alternative way to prepare this dish would be to roast the cumin seeds and fold them into the rice once it's cooked.
