Litty Lemongrass Garlic Mashed Potatoes

This litty lemongrass garlic mashed potatoes recipe was the result of an over abundance of potatoes. I’m curious. How do you store your potatoes? How long do they keep? Unlike most vegetables, potatoes keep quite well actually.

However, when I was younger, I always found that as the potatoes were about to get finished, they were in really poor condition. This is when I purchase the large debe.

So, my new batch of potatoes has bumped into the old batch which means that I am on a potato frenzy right now. Hence this litty lemongrass garlic mashed potatoes recipe.

If you would like your potatoes to last longest;

  • Separate the ones in poor condition from the good ones right off the bat. They will spoil faster and in turn, spoil the rest.
  • Store in a cool dark place away from direct sunlight and with adequate ventilation

Use the potatoes in poor condition first to avoid wastage. Potatoes should be able to last at least a month if stored well.

Instructions
  1. Peel and wash the potatoes. Place them in a pot to boil together with the lemongrass. Add salt to the water and boil for 20 minutes.
  2. When the potatoes are fork ready, drain out the water and remove the lemongrass. You will have crushed the garlic as the potatoes were cooking.
  3. In a separate pan, heat the vegetable oil and saute the garlic. Place the potatoes in with the garlic and switch off the heat. Sprinkle in the black pepper and mash up the potatoes.
  4. Serve with spring onion garnish and or a sprig of rosemary.
Recipe Notes

Do take care not to burn the garlic as it will turn bitter and completely throw the recipe off.

Also, instead of using vegetable oil, you may use butter. This will give the dish a whole new flavor compilation.
