Honey Lemon Muffins

I  just got back from a brief out of town trip and decided to please my daughter with these sweet honey lemon muffins for breakfast.

I  haven’t made any road trips in the last two years, give or take a few moons, so I was having a private celebration of my own with these muffins. honey lemon muffins

You see, having titanium in your  back can be quite overwhelming. But mostly restrictive. You are never quite sure how far you can push yourself. Indeed, my mobility has been continually improving but I was always weary of long road trips.

The worst part is that you are never really sure what you are afraid of. Perhaps death. Preferably paralysis? This is what holds you back and keeps your feet firmly on terra firma.

I arrived in the evening so I had to find a way to celebrate this huge, tiny win. What better way to do that than with these sweet breakfast honey lemon muffins treats.

The twist in this recipe is that I used natural unprocessed honey. Consider this fare warning, the level of decadence therein is absolute!

Instructions
  1. In a bowl, mix the dry ingredients i.e flour, salt and baking powder.
  2. Whisk the butter and sugar until fluffy.
  3. Add in the eggs one at a time.
  4. Pour in the honey and vanilla essence and mix.
  5. In a separate container, mix the milk with the lemon juice and lemon zest. Allow to stand for 5 minutes.
  6. Mix the wet ingredients into the dry ingredients a little at a time until well combined.
  7. Pour the mixture into muffin tins and place in an oven that has been preheated to 180°c.
  8. Bake for 15-17 minutes.
  9. Remove and allow to cool.
