Easy Omelette with Cheese and Mint

There is this cliché about a good hearty breakfast; eggs, bacon, cheese. Any or all of these. I loooove them all. And especially this omelette with cheese. Personally, I thank the Big Guy upstairs, that I’m not allergic to any of them! That would be miserable.

I cringe when my brain signals to me that too much might not be good for me. Not fare! But I also believe that a balance should be established. If only for sanity sake. So I indulge, and this is an absolutely decadent omelette with cheese!

I  recall vibrantly, how my brother would get through thirty eggs in three days and it was never enough! We couldn’t afford cheese back then, but we had onions and tomatoes and they hit the spot just right.

Oh! And this is totally unrelated but while this reverie still has me in my mothers kitchen, we used to go through 5 litres of milk in the same amount of time. Sigh!

I  usually like some heat in my meals so you may add some chillies or cayenne pepper. However, mint tends to be somewhat mild and can easily be overpowered by other herbs and spices. This is the reason I avoided the heat as well as bell peppers, so that the mint can shine through.


Different people cook their omelettes differently. I remember the first way that I was taught was to fry the onions and tomatoes and pour them into the bowl with the eggs, mix and return to the pan. Others mix the vegetables with the eggs while raw and fry everything at once. Over the years, I have settled into my style.

Instructions
  1. Beat the eggs in a bowl and add the black pepper, turmeric, mint, garlic and salt. Mix well.
  2. In a skillet, sautèe the onions and add the tomatoes.
  3. After one minute, pour in the eggs. Keep the heat on low.
  4. Sprinkle some cheese on top of the eggs before flipping.
  5. Flip the eggs when the underside is done.
  6. Allow to cook for another minute before serving.
  7. Garnish with mustard and cucumber slices.
  8. Sprinkle some extra cheese on top. Cheese always makes everything better.
