Jalapeno and Rosemary Fried Tilapia
This deep fried tilapia recipe is a delicious blend of heat from the jalapeno pepper and the aromatic rosemary herb, all set on the base of a tomato sauce.

  1. Sautee the onions in the vegetable oil until translucent. Chop the coriander stalks in the mean time.
  2. Add the coriander stalks and stir for 30 seconds then the ginger, garlic and black pepper.
  3. After stirring for one minute, introduce the jalapenos, rosemary.
  4. Stir for another minute and add the tomatoes and green bell peppers. Season with salt.
  5. Cook down until the tomatoes are wilted. Pour in 1/2 a cup of water and stir.
  6. Place the tilapia in the pan and simmer for five minute on each side.
  7. Garnish with sliced jalapenos and a sprig of rosemary and serve.
