Deep Fried Tilapia with Rosemary and Jalapenos

If you are looking for readily available fish to prepare, it is most probably going to be tilapia. In Kenya, generally. A lot of the fish you will find at the local market will be deep fried tilapia. One may choose to eat it as it is or take it home and season it further. And because I love flavor, I made this delicious deep fried tilapia recipe with rosemary and jalapenos.

I enjoy cooking fish because its quick to prepare, delicious and healthy. Plus, everyone loves fish in my house! Its always a win! On this particular occasion though, I had not planned to cook fish that evening. I had come from visiting my daughter is school and she had told me how much she missed fish. On many occasions we would go to our favorite restaurant and share one large tilapia. With traditional vegetables and ugali.

That is our thing. Just like my dad and I have Chinese.

So, I left the school grounds with fish on my mind. Just the mental picture had me drawing a bee line for Eastleigh, the part of the CBD that was famous for fish. In Eldoret. I bought my fish, which was aptly wrapped with an old newspaper. I wouldn’t have it any other way.

As I was exiting the market, I came to the vegetable section and the red jalapeno basket grabbed my attention and stopped me dead in my tracks. I love the jalapeno pepper! No scotch bonnets though. No matter, I had what I wanted from the market.

I would get some rosemary from my potted plant at home. Do you have potted plants? A little kitchen garden? Perhaps I dry a few of these jalapenos and grow them? Or maybe we get on with saucing this deep fried tilapia beauty!

Jalapeno and Rosemary Fried Tilapia
This deep fried tilapia recipe is a delicious blend of heat from the jalapeno pepper and the aromatic rosemary herb, all set on the base of a tomato sauce.

Instructions
  1. Sautee the onions in the vegetable oil until translucent. Chop the coriander stalks in the mean time.
  2. Add the coriander stalks and stir for 30 seconds then the ginger, garlic and black pepper.
  3. After stirring for one minute, introduce the jalapenos, rosemary.
  4. Stir for another minute and add the tomatoes and green bell peppers. Season with salt.
  5. Cook down until the tomatoes are wilted. Pour in 1/2 a cup of water and stir.
  6. Place the tilapia in the pan and simmer for five minute on each side.
  7. Garnish with sliced jalapenos and a sprig of rosemary and serve.
