Creamy Coleslaw Salad

We could all do with a good coleslaw salad every so often . Healthy, crisp and refreshing, this slaw can be enjoyed as a side or snack.

I was pleasantly surprised at how Jasmines enjoyed and relished this salad.

Once you are done preparing the salad, refrigerate it to retain its crispness. It is recommended that you store it in an air tight container to keep it fresh for longer.

There are two main variations of a coleslaw salad. You can can toss it using mayonnaise  (salad dressing) or a vinaigrette. For this particular coleslaw salad, we shall use salad dressing. If you do not have mayonnaise or salad dressing, you may use plain yogurt as a substitute.

Coleslaw salad
Instructions
  1. Thinly slice the cabbage in a bowl.
  2. Add the apple cider vinegar and about 1 cup of water to soak.
  3. Peel and grate the carrots in a separate bowl.
  4. Julienne the onion and soak in salty water.
  5. Chop up the coriander. Drain the water from the cabbage and the onion. Mix all ingredients in one bowl.
  6. Toss and add the salad dressing.
  7. Season with salt and black pepper.
