Chocolate Cupcake Recipe With Buttercream Frosting

I like holidays. For all the right and not so right reasons. But mostly for the indulgence. Family and friends come together and enjoy good company and great food. One of my favourite this Easter was this divine chocolate cupcake recipe. It is such a simple recipe, you should have no excuse not to try it.

I realise that perhaps our traditional Kenyan holidays, Easter or otherwise, are not normally attended to with pastries such as cakes or cupcakes for that matter. It’s usually a mainly meaty affair with a good amount of fried dough.

However, I was pleasantly surprised at how well this chocolate cupcake recipe was received! I literally had to whip up a larger batch! So, If you are going to use this chocolate cupcake recipe for guests, as opposed to small family use, I suggest you double or tripple the ingredients.

Choco cupcake

The buttercream is also a breeze to make and requires only four ingredients. You’ll be pleased with yourself! Feel free to use any colouring of your choice.

This chocolate cupcake recipe is actually quite similar to one that I used for my simple chocolate cake.

Instructions
For the cupcake
  1. Pre heat oven to 180°c.
  2. Mix all the wet ingredients in a bowl.
  3. Combine all the dry ingredients together in a separate bowl.
  4. Pour the wet ingredients gradually into the dry ingredients as you mix.
  5. Whisk well.
  6. Place the cupcake liners in the baking tin.
  7. Pour the mixture into the cupcake liners. Fill up to 3/4 of the liners.
  8. Place in the oven and bake for 40 minutes.
  9. When ready allow to cool on a rack. Use the toothpick test to confirm readyness.
For the Buttercream
  1. In a bowl, mix the butter and the icing sugar.
  2. Add the milk gradually, until you get the correct consistency.
  3. Select your food colour and add until you get the desired colour.
  4. Vanilla essence goes in at this point. And that's it!
Recipe Notes
  • The toothpick should come out clean and dry.
  • Do not frost until the cupcake are cool.
