Sweet Zingy Lemon Orange Marmalade

This weekend I got a good number of oranges from the market. As soon as I got home my daughter asked me what quick thing can we do with them because they looked so good. We made orange marmalade. I love it when she gets involved in helping me around the kitchen.

Marmalade is different from jam in that it is made from citrus fruits and it includes the rind and/or peels of these fruits. It is enjoyed for breakfast, dessert and even included in some drinks. Use it to bring life to your oatmeal or swirl it in your yogurt. It is also awesome when used to make sauces for your meat dishes.

In this orange marmalade recipe, I used the rind of a lemon. You can use the peels of the orange too but that will require you to cook and simmer the mixture for about two hours to reduce it.

Ingredients
  • 2 cups of freshly squeezed orange juice
  • ½ cup of sugar
  • 1 teaspoon lemon zest
  • 2 teaspoons freshly squeezed lemon juice

Let’s Make Marmalade!

Begin by washing the fruits thoroughly. Pay extra attention to the lemon as we shall be using its rind. If you choose to use the orange peel, take note of this too.

Squeeze the juice of the oranges until you have two cups.

Pour the orange juice in a pan and heat for 5 minutes.

Add the sugar and lemon zest and stir continuously until the sugar is dissolved.

When it begins to thicken, introduce the lemon juice and continue stirring on low heat.

Continue until you get to your desired consistency. Remove from the stove and allow to cool. Do not wait until it gets too heavy because it will get thicker after it cools.

Once it has cooled, store in jars for later use.
