Beef Teriyaki with Sweet Peas

This beef teriyaki with sweet peas recipe is full of gratifying flavours with a light crunch from the sweet peas.

These peas are specifically known as Garden peas, or alternatively, Sweet peas or English peas. In some cultures, they can be eaten raw but here in Kenya (and the larger East Africa), we prefer to boil them first.

 


Ingredients

1 kg Beef

3 cloves of garlic

1 Red Onion

1 teaspoon crushed ginger

2 Tomatoes

¼ cup Teriyaki sauce

2 tablespoons Dark Soy sauce

1 cup Sweet peas

A bunch of Coriander

Salt to taste

A pinch of black pepper


Instructions

Pre-boil the sweet peas for about 15 minutes, drain the water and blanche in ice cold water. Shouldn’t take more than 3-5 minutes. Remove from the cold water and leave to stand.

In a large pot, sautee the onions until they are soft and translucent. Toss in the crushed ginger and garlic.

Chop up the stalks of the coriander and add to the pot. Leave some for garnish. Sprinkle black pepper to taste.

Add the cubed beef to the pot and allow to cook for 10 minutes. Pour in the teriyaki sauce as well as the soy sauce.

Stir and add in the tomatoes. Cover and allow to cook for 5 minutes.

Finally, take the garden peas and add them to the beef. Pour in a ½-1 cup of water and simmer for 10 minutes.

Include the chopped coriander leaves at this point and cook for 3-5 minutes.
