There are days when you just want to indulge. To draw the drapes and dote on yourself. When you have to satisfy that craving. The things that cheat days are made of! Include this lyonnaise potatoes to your options, a hearty meal sure to warm your soul and satiate your belly.
By adding turmeric to potatoes you infuse both color and flavor. Lyonnaise them and you add sweetness from the caramelized onions. Complement this with stir fried beef and your dinner is made!
Ingredients for the Lyonnaise Potatoes:
- 10 Medium sized Potatoes
- 1 red Onion
- 1 tea spoon Turmeric
- Salt (to taste)
- 4 tbsp vegetable oil
Ingredients for the Beef Stir Fry:
- 1/2 a kilo of beef
- One red onion
- 1 Green Bell Pepper
- A tbsp Dark Soy Sauce
- 1 tbsp Tomato Paste
- 2 cloves Garlic
- 1cm crushed Ginger
- 2 Tomatoes
- 2 cubes Royco
- 1cup stock
- Salt (to taste)
- 4 tbsp Vegetable oil
Peel the potatoes and cut them into dices or halves, depending on the size of the potato. It is important to try to make sure that all the wedges are around the same size. This is to ensure that they all cook evenly. Wash the potatoes and put them in a pot of water to boil. Add salt (to taste) into the water and leave to boil until the potatoes are almost completely ready.
You can check this with a spoon by trying to cut into one piece…it should not break too easily. When the potatoes are done, drain the water out into a separate container and leave to cool for a while.
Slice the red onion in half rings i.e from the top of the onion, cut down to the root, place one half of the onion on its flat side and slice across.
In a skillet or a large frying pan, dribble 4 table spoons of vegetable oil and heat. When the oil is hot, place the onions and lower the heat. Sprinkle 1 tsp of turmeric over the onions and keep stirring until the onions are soft and tender.
Now take the potatoes and put them in the pan with the onions. Mix them together gently for no more than 2 minutes then remove from the pan ready to serve.
For the Beef Stir Fry
Boil the beef diced) until it is tender and the water has reduced from the pot. Add vegetable oil and onion, stir and cover for 2 minutes. Add diced garlic, crushed ginger, tomatoes and salt then cover and leave to simmer for 2 minutes.
Take dark soy sauce and use one table spoon as well as one table spoon of tomato paste in the mixture. Stir until well infused. Sprinkle two cubes of Royco and add 1 cup of the potato stock that you kept aside from boiling the potatoes. Allow to simmer for ten minutes. Add sliced green bell pepper and simmer for ten more minutes.
I added the green bell pepper towards the end because i want it to be fresh and crunchy and not over cooked.
Serve the meal with vegetables of your choice and enjoy the amazing sweetness of the potatoes! Go ahead and pamper yourself! Try out these hasselback potatoes too as an alternative to the lyonnaise potatoes in this recipe.
