Gather round, everyone! The school holidays are here and the festive season is just around the corner! The season for giving and sharing. And what better way to gift your loved ones than with a batch of delicious home made eggless chocolate cookies!
Okay, so perhaps it’s confession time😕. I love eggs. They are way up there with the POTATO 😍. But I try not to have them around all the time, for my own good. So, now that my girls and their sweet teeth are not guided my meal planning routine, I get the ad hoc requests to fire up the oven.
This is when this eggless chocolate cookies recipe comes in to save the day! Unlike the ginger snap cookies, these cookies are moist, chewy and loaded with yummyness 😉.
1 cup All purpose flour
½ teaspoon baking powder
¼ cup cocoa powder
½ cup sugar
2 tablespoons cooking oil
4 tablespoons water
2 tablespoons margarine
¼ teaspoon salt
In a bowl, mix the All purpose flour, baking powder, cocoa powder and salt.
Whisk the oil, margerine, sugar and half the water (2tbsps) until fluffy.
Continue to add the remainder of the water as you whisk.
Add the wet ingredients (margerine et al) to the dry ingredients (flour e.t.c) and mix well.
Cover the bowl with cling film or a cloth and allow to stand in the refrigerator for 30 minutes.
Set the oven to 200°c. Grease your baking tray.
Using the cookie dough, roll out some small balls and place on the tray. Bake for 10 minutes!
Once out of the oven, set the cookies out to cool on a cooking rack. Store in an air tight container 😊
