It has been about two weeks now since I prepared this amazing fried tilapia in creamed peppers dish and it was a huge hit! So you know I had to recreate it for Dad over his visit, and he loved it too! This is why you absolutely must give it a go.
In this recipe, I used milk curd but you can use the cream of fresh milk too.
1 medium sized Tilapia (deep fried)
2 tablespoons milk curd or milk cream
1 red onion
2 cloves of garlic (crushed)
½ cup coriander
1 teaspoon grated ginger root
½ large red bell pepper
1 small green bell peper
½ large yellow bell pepper
½ teaspoon papprika
Salt to taste
A pinch of black pepper
Juice of half a lemon
Ok, you have all your veggies prepped, lets do this!
Pull out your skillet, place it on the stove and drop in the two tablespoons of milk curd/cream. As it warms up, the curd/cream will melt down, but only to a certain extent. Once you are down to some crumbly white bits, add some vegetable oil.
When the oil has heated up, sautee the onions until they are translucent before adding coriander, ginger and garlic.
Fry for about one minute then sprinkle salt, black pepper,papprika and thyme. At this time, you will begin to notice the curd/cream caramelise.
Add in the bell peppers now, beginning with the green peppers and finishing off with the yellow peppers; giving a minute between each add.
With all the peppers in, add the tomatoes and half a cup of water to avoid burning. Stir for a minute and place the tilapia into the skillet. Allow to simmer on low heat for about three minutes each side.
Slide the fried tilapia onto your plate and drizzle some lemon juice. You will be unable to ignore the sweetness in this dish! And when they ask if you added honey, just smile coyly and wink left😉! Yum!
