The one day of the week that should be easy is Sunday. This sausage, pepper, potato bake is intentionally made for this. It is indulgent, tasty and makes for great comfort food.
You can make enough of it for brunch and still have enough to tide you over for dinner. This will mean taking the hassle out of cooking twice and ensuring you have a Sunday of champions :). An added plus is that the kids will love it too 🙂
It is indeed a relief that potatoes are now more readily available at the market. I’m literally rolling in them. The downside to this however, is that you can get hmmm ‘bored’ with making them certain ways. And if you don’t use them promptly, they pull a ‘suddenly spoilt avocado’ on you. By the way, if you have planted maize, I’m giving away ‘gunias’ sheeeesh!
So here is another way to play with potatoes.
- 10 medium sized potatoes
- 1 Red onion
- 1 Green bell pepper
- 3 Beef sausages
- 1 teaspoon oregano
- Black pepper and salt to taste.
- 1 cup of Parmesan cheese
First, fry the sausages slightly, only to brown them. Set them aside to cool.
Now peel and cut the potatoes into slices of medium thickness. In the same pan as you fried the sausages, fry the potatoes for no more than five minutes.
As the potatoes cook, dice the onion, green bell pepper and sausages into chunks.
Also, heat the oven to 200ºc.
In a baking tin, or casserole dish, place the sausages, onions and bell peppers.
The potatoes should be ready by now, so take them out and place them in a bowl lined with serviettes, to drain excess oil.
Mix the potatoes in with the rest of the ingredients. Add salt, black pepper and oregano and toss gently.
After giving a light toss, over the baking tin with aluminium foil. Place the dish in the oven and set the timer for 30 minutes.
When the thirty minutes are up, remove and drizzle grated Parmesan cheese. You may also use Mozerrella, chedder or gouda cheese.
Return to the oven for another 10 minutes, but do not cover with aluminium foil this time round. After the timer goes off again, the cheese will be sufficiently melted and you can now dig in 😋
